Gluten Free Sensations Cinnamon Apple Muffins

You will need:

Dry ingredients:
1 10-oz box Gluten Free Sensations Chocolate Chip Cookie Mix
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 t xanthan gum
1 teaspoon cinnamon
1/2 teaspoon allspice

Wet ingredients:
1 cup applesauce
1/3 cup olive oil
1/2 cup brown sugar
2 teaspoons vanilla
2 eggs
4 tablespoons apple juice (or apple juice concentrate if you like a deeper flavor)

Preheat oven to 350 degrees. Blend dry ingredients. In a separate bowl mix wet ingredients. Add dry ingredients to the wet ingredients and mix until just combined. Spoon into 12 muffin cups. Sprinkle with granola or sugar if you would like a crunchy top. Bake for 15 - 20 minutes or until a toothpick inserted comes out clean.

These muffins freeze well so feel free to make several batches to have on hand for those times when things are a bit hectic!
