6 cups blueberries
1 TBSP lemon juice
2 Gluten Free Sensations Pie Crusts
1 Cup Sugar
1/2 Cup GF All-Purpose Flour
1/8 TSP salt
1/2 TSP ground cinnamon
2 TBSP butter
1 large egg, lightly beaten
1 TSP sugar

Sprinkle berries with lemon juice and set aside
Fit one GF pie crust into a pie plate according to the package directions
Combine 1 cup of sugar with next 3 ingredients and add to the berries and stir
Pour into the pie shell and dot with butter
Unfold another pie crust and remove any creases
Place over the filling and press and crimp edges
Cut slits on top to allow steam to escape
Brush top of crust with beaten egg and sprinkle with 1 TSP sugar
Bake at 400 degrees for 75 minutes
Note: Can cover edges with aluminum foil to prevent too much browning
