Creamy Summer Pasta Salad
9 oz. package Gluten Free Fusilli Pasta
1/2 red bell pepper; chopped
1 1/2 ribs of celery; finely chopped
4 ounces of cheddar cheese; cut into chunks
1/8 cup onion; finely chopped
1/2 cup of Mayonaise
2 Tbsp of sugar
1 Tbsp of apple cider vinegar
1/2 tsp. black pepper
1/2 tsp. dried parsley
1/2 cup of frozen peas; thawed
1. Boil Gluten Free Fusilli pasta according to package directions, drain well.
2. In a medium bowl combine Mayonnaise, sugar, apple cider vinegar, black pepper and dried parsley.
3. Combine the Fusilli pasta with the dressing, then stir in chopped red bell pepper, chopped celery, finely chopped onion, thawed peas, and chunks of cheese.
4. Chill for one hour before serving.
