No Bake Lemon Cheesecake

Ingredients:

  • 1 Cup boiling water
  • 1 Cup sugar
  • 1 Tsp vanilla
  • 2 Tbs lemon juice
  • 1 - 3 oz box lemon gelatin
  • 1 - 9 oz box Gluten Free Sensations Cranberry Pecan Granola
  • 1-12 oz chilled evaporated milk
  • 8 oz cream cheese, softened
  • 6 T butter, melted
  • 1/2 cup brown sugar



Directions:
1. Mix water and gelatin.  Refrigerate until mixture just starts to thicken.

2.  Whip milk until fluffy and set aside.

3.  Beat cream cheese, sugar, vanilla and lemon juice until smooth.  Continue beating and add milk.  Then add gelatin.

4.  Mix granola, butter and brown sugar.

5. Press granola mixture into the bottom of 8x11 pan, reserving 1/2 cup.  

6. Pour cream cheese mixture over top and sprinkle with remaining granola.  

7.  Refrigerate 2-3 hours or until set.  Cut and serve.
