1.  Mix pumpkin puree, maple syrup, yogurt, vanilla and olive oil until blended. 

2.  Add Gluten Free Sensations Pancake & Waffle Mix, cinnamon and nutmeg and whisk until fully blended.  Mixture should rise.  (Note: allow batter to rest one minute and do not stir again)
3.  Heat Griddle to 350 degrees
4.  Scoop a quarter cup of the batter on to the buttered griddle
5.  Cook until light brown on both sides
