Zucchini Granola Cookies

1.  Preheat oven to 350 degrees

2.  Mix butter, brown sugar, egg, and vanilla in mixing bowl

3.  Add Gluten Free Sensations Chocolate Chip Cookie Mix, and Gluten Free Sensations Granola

4.  After mixture is creamy add zucchini

5.  Stir in chips

6.  Drop by tablespoon 2 in. apart onto parchment paper

7  Bake at 350 degrees for 8-10 minutes or until lightly brown.  

8.  Let cool and ENJOY!

OK, so I have to be honest.  When one of our team members approached me with this gluten free cookie recipe and said she wanted to make chocolate chip cookies with zuchini and granola in them, I thought it was going to be a waste of time.  I never like to stifle creativity, so I said sure, but I was pretty confident this recipe would never get off the ground .   When I tasted the finished product,  WOW!  Am I glad I am not the only one working up recipes around here.  This recipe is fantastic!  Moist, cake-like and not crumbly at all.   If I need to make a batch of cookies, this has become one of my go-to recipes.  Be adventurous and give it a try - you won't regret it!
